Bateta nu Shaak - Gujarati Spicy Potato Fry State of Gujarat is Western part of  India.  Gujarati cuisine had its own special unique taste from all over India. .Today's my recipe Bateta nu Saak - Potato Stir  Fry is a delicacy from Gujarat. This recipe  I learn from my Gujarati neighbour. I  reminisce fondly those days....Just within a week after my marriage I had to move from South India to Northern region, almost 2000 km away to a different state.Those days I didn't know ABCs of cooking. Luckily for me, my husband got ourselves placed in the  Campus quarters of the company where he was working and, I used to go and spend my time with my wonderful neighbour friends, and get adjusted to the new locale, people and culture. Those were the times when I was introduced to North Indian dishes,Gujarati dishes. This recipe is very simple and delicious and this yummy curry  goes well with Indian breads or  Plain Rice.

Louki ka Kofta Louki ka Kofta  is a North Indian gravy based Curry made with Bottlle Gourd.  In India a range of gourds are available such as Bottle Gourd, Ridge Gourd, Ash Gourd, Bitter Gourd, Snake Gourd besides a variety of cucumbers and these are available through-out the year.  Today I am presenting a curry called Louki ka Kofta,  made with Bottle Gourd. This wonderful gourd is a  healthy vegetable,  looks like a Bottle or even like a mace, when it grows to a huge size in the farm. Known as Calabash ( Lagenaria siceraria), i t is considered as a endothermic or  cool vegetable and is very easily digestible too. Louki ka Kofta is a popular curry in Northern Parts of India. It goes  very well with a wide variety of Indian Breads (Rotis). Long time back i  learnt this curry from one of my  friends from Delhi. Now  is the season for tender mangoes and tender cashews and time for harvesting pineapples and jack fruits and many more tropical fruits in our country. My parents had a couple of orchards that had beautiful mango and cashew trees. During my childhood, we used to get tender green mangoes and tender cashews from these orchards every year between February  and April. Now-a-days i am not getting the opportunity to visit my parents' place due to work and other exigencies. So i miss the spring/summer festivities associated with crop harvests and resultant jubilant moments with my brothers and cousins and all the family members of my parerntal home. I made this curry in a microwave oven in an emergency. At times when no other cooking equipment is not available and a quick serving is impending, this would work as a great alternative.I thought of sharing it with you all.
