Dal Fry

Dal Fry is a comfort and rich Tur dal (split pigeon  peas lentil) recipe from northern part of India. It is a simple,tasty and delicious side dish, goes well with  piping hot steamed rice or Indian flat breads. 




Preparation time: 10 minutes
Cooking time: 20 minutes
Serve 4.

Ingredients:

1.     Toor dal    -     1 cup
2.     Water        -     2 ½ cups
3.     Salt            -     To taste
4.     Turmeric  -     1 tea spoon

Seasoning : 
1. Tomatoes                           -   3  (finely chopped)
2. Clarified butter or ghee      -  3   tablespoons
3. Cumin seeds                       -  ½   tea spoon
4. Mustard seeds                    -  ½   tea spoon
5. Asafotida                            -  ¼  tea spoon
6. Whole red chili                   -  2 
7. Bay leaf                              -  2
8. Green chili                          - 1finely chopped
9. Ginger                                 -  small piece finely chopped
10 Fresh Coriander                 -  few chopped
11.Red chilli powder              - ½ tea spoon  
12.Sugar                                 - 1 tea spoon
13.Mango powder                  -  tea spoon
14 Garam masala                   - ¼ tea spoon

  
Method:
1. Wash Tur dal with fresh water.
2. Put dal with 2-1/2 cups water into a pressure cooker and cook on medium high heat.
3. When the pressure cooker starts to steam, turn the heat down to medium and cook for five minutes.
4. Turn off the heat and wait until all the steam has escaped before opening the pressure cooker.
5. Mash  Dal well with masher. If needed add more water, and keep dal aside.



Seasioning:


1. Heat ghee in a pan.
2. Add the cumin seeds,mustard seeds fry for few minutes till to splutter then add the asafotida, red chilies fry for few minutes.
3. Now add Bay leaf,turmeric powder,red chilli powder,chopped green chilliies.ginger pieces stir well.
4. Add chopped tomatoes and salt mix well and cook for few minutes till tomatoes to become soft .
5. Then add mashed dal and sugar cook in a high flame for 1 or 2 minutes till become soft and smooth consistency.Now slow the flame.
6. Now add garam masala,mango powder and chopped coriander leaves cook for few minutes.
7. Off the flame serve steaming hot dal with piping hot plain rice or Indian flat breads.
