Fresh (Ground Masala) Sambar

Sambar is a regular side accomplishment in all south Indian homes. Today i am going to post my  home made freshly ground Sambar masala recipe. Usually we will make this Sambar in festivals or any functions.

Ingredients for Sambar:


  1. Vegetables                     250 gm  (Chopped Ladies finger,Madras Cucumber,Tomato)
  2. Tuvar dal                       150 gm
  3. Tamarind                       15 gm
  4. Mustard seeds                 1 tea spoon
  5.  Fenugreek seeds             1 tea spoon
  6. Asafoeteda                      1/2 tea spoon
  7. Turmeric powder            1/2 tea spoon
  8. Salt                                1 table spoon
  9. Sugar or jaggery              1 tea spoon
  10. Vegetable oil                   1 table spoon
  11. Water                            4 to 5 cups

Ingredients for Sambar Masala :



  1. Grated fresh coconut       1/2 cup
  2.  Whole red chillies           5
  3. Coriander seeds              1 table spoon
  4. Fenugreek seeds             1/2 tea spoon
  5. Vegetable oil                  1 tea spoon
Method for Sambar Masala:


  1. Heat Vegetable oil in a pan in a medium heat.
  2. Fry Whole red chillies,fenugreek seeds for 1minute and add Coriander seeds,Coconut fry in high flame for few minutes and off the flame.keep aside to cool.
  3. Now take this fried spices in a mixture grinder jar and grind this  to  fine paste to adding little amount of water.
  4. Keep this Sambar masala paste aside.



Method for Sambar:


  1. Clean Tuar dal and put it in pressure cooker and add 4 cups water and close the lid.
  2. Place pressure cooker in a stove top in high heat and cook for 3 minutes. 
  3. Off the flame an allow  pressure cooker to cool.
  4. In a mean while take Tamarind in a small bowl and add 1 cup hot water and keep aside for few minutes and take Tamarind juice from this water.
  5.  Now take Tamarind juice in a wide vessel add 2 to 3 cups water and Chopped Vegetables,Salt,Turmeric powder and cook in a medium flame till vegetables to cook well.
  6. Then add cooked Dal (mash it well) , Sambar masala,Sugar or Jaggery and cook in medium  flame for 2 to 3 minutes. and off the flame.
  7. Heat Vegetable in a  pan in a medium heat fry Mustard seeds,fenugreek seeds till to splutter and then add Asafoeteda ,Curry leaves off the flame add this seasoning to Samabar.
  8. Serve piping hot Samabar with white Rice or Idly or Dosa.
