Dahi Bara and Aloo Dum ( Sweet and Tangy Chat Food From Orissa)

Dahi Bara with Aloo Dum is a "chaat" food. I tasted it for the first time at one of the Chaat corners in Bhubaneswar (Orissa, India). The Bara was served in a unique leaf-bowl, which impressed me very much.
Today I am going to share the recipe for making Dahi Bara...


Bara( Also called Vada: an Indian doughnut made from Udad dal/black gram)

Dahi Bara with Aloo Dum

Ingredients for Bara(Vada):
  1. Udad Dal (black gram) 1 cup soaked in water overnight(or for 6-8 hours)
  2. Salt 1 tea spoon
  3. Vegetable oil 3 cups (for frying the Bara/Vada)
  4. Polythene paper 1 sheet(clean)
  5. Water 1 small cup
Ingredients for Dahi:
  1. Curd 2 cups
  2. Salt 1/2 tea spoon
  3. Sugar 1 tea spoon

Ingredients for Aloo Dum:
  1. Aloo (Potato) 1 big
  2. Sprouts of Moong (Green gram) 1 samll bowl
  3. Salt 1 tea spoon
  4. cumin seed powder 1 tea spoon
  5. Pepper 1/2 tea spoon
  6. Lemon 1/2 cut lemon juice
  7. vegetable oil 1 table spoon
  8. Water 1 small cup
Ingredients for the vegetable garnish:
  1. Tomato 1 (finely chopped)
  2. Onion 1 (finely chopped)
  3. Coriander leaves 50g (finely chopped)
  4. Cumin powder 1 table spoon
  5. Chat masala powder 1 table spoon
  6. Green chillies 2 (cut into small pieces)
  7. Ginger 20g (finely grated)
Method for making Bara:
  1. Drain the water from soaked Udad dal(black gram).
  2. Blend it well in a food processor into a smooth and thick batter. Add few table spoons of water while blending if the batter is too thick.
  3. Take out the batter into a wide bowl, add salt and mix well.
  4. Place a table spoon of the batter on a clean polyethylene sheet. Carefully shape the batter into a round doughnut(Vada/Bara) with your fingers.
  5. Heat the 3 cups of vegetable oil in a shallow pan on medium flame.
  6. Carefully drop the shaped doughnut into the oil and fry it on medium flame for 1 to 2 min. Flip it on to the opposite side. Fry till it becomes golden brown on both sides.
  7. Take out the fried Bara/Vada onto a filter paper to allow the oil to get soaked out.
  8. Take 1/2 cup of cold water and 1/2 cup if yogurt in a wide bowl,mix well with blender. Add 1 tea spoon of salt into it.Mix well.
  9. Place the fried Bara in the yogurt and water mixed batter for 1 min.

Method of making Aloo Dum:
  1. Microwave the potato for 3 minutes. Remove the skin and mash it well with a spoon or a wooden spatula.
  2. Microwave the sprouts of Moong for 3 minute and keep aside.
  3. Heat 1 table spoon of vegetable oil in a small pan on low flame.
  4. Add 1/2 tea spoon of cumin seed powder and let it heat for 2 seconds.
  5. Add the mashed potato(Aloo Dum) and the sprouts of Moong (green gram) into the pan.
  6. Add 1 table spoon of water and mix well. Let it cook for 1 min.
  7. Add 1/2 tea spoon of cumin seed powder, salt, pepper and cook for 1 more min.
  8. Take it out into a small bowl.
  9. Sprinkle some lemon juice on the top.
  10. Aloo Dum is ready.
Method for making Dahi:
  1. Take curd into a wide bowl and beat it well using a whisk.
  2. Add salt and sugar, mix well and keep it aside.

Method of making the vegetable garnish:
  1. Take diced tomatoes, onions, green chillies, coriander leaves and grated ginger in a plate.
  2. Sprinkle some salt and lemon juice on it.
  3. Vegetable garnish is ready.

Presenting the Dahi Bara and Aloo Dum:
  1. Take one Bara in a bowl.
  2. Add 1 table spoon of the prepared Aloo Dum.
  3. Add 2-3 table spoons of the prepared Dahi on the Bara and Aloo Dum.
  4. Add 2 table spoons of vegetable garnish.
  5. Sprinkle some chat masala and cumin powder.
  6. Mouthwatering Dahi Bara and Aloo Dum is ready to serve.
