Fresh (Ground Masala) Sambar
Sambar is a regular side accomplishment in all south Indian homes. Today i am going to post my home made freshly ground Sambar masala recipe. Usually we will make this Sambar in festivals or any functions.

Method for Sambar:
- Vegetables 250 gm (Chopped Ladies finger,Madras Cucumber,Tomato)
- Tuvar dal 150 gm
- Tamarind 15 gm
- Mustard seeds 1 tea spoon
- Fenugreek seeds 1 tea spoon
- Asafoeteda 1/2 tea spoon
- Turmeric powder 1/2 tea spoon
- Salt 1 table spoon
- Sugar or jaggery 1 tea spoon
- Vegetable oil 1 table spoon
- Water 4 to 5 cups
Ingredients for Sambar Masala :
- Grated fresh coconut 1/2 cup
- Whole red chillies 5
- Coriander seeds 1 table spoon
- Fenugreek seeds 1/2 tea spoon
- Vegetable oil 1 tea spoon
- Heat Vegetable oil in a pan in a medium heat.
- Fry Whole red chillies,fenugreek seeds for 1minute and add Coriander seeds,Coconut fry in high flame for few minutes and off the flame.keep aside to cool.
- Now take this fried spices in a mixture grinder jar and grind this to fine paste to adding little amount of water.
- Keep this Sambar masala paste aside.
- Clean Tuar dal and put it in pressure cooker and add 4 cups water and close the lid.
- Place pressure cooker in a stove top in high heat and cook for 3 minutes.
- Off the flame an allow pressure cooker to cool.
- In a mean while take Tamarind in a small bowl and add 1 cup hot water and keep aside for few minutes and take Tamarind juice from this water.
- Now take Tamarind juice in a wide vessel add 2 to 3 cups water and Chopped Vegetables,Salt,Turmeric powder and cook in a medium flame till vegetables to cook well.
- Then add cooked Dal (mash it well) , Sambar masala,Sugar or Jaggery and cook in medium flame for 2 to 3 minutes. and off the flame.
- Heat Vegetable in a pan in a medium heat fry Mustard seeds,fenugreek seeds till to splutter and then add Asafoeteda ,Curry leaves off the flame add this seasoning to Samabar.
- Serve piping hot Samabar with white Rice or Idly or Dosa.
