Grated Carrot Stir Fry

Grated carrot stir fry is one of the easiest and simple recipe.This is my elder ones favorite and he himself experiment with this stir fry. Even i like this colorful,healthy recipe.







Ingredients:

  1. Carrots                                3 
  2. Grated coconut                    2 table spoons
  3. Black gram                          1 table spoon
  4. Cumin seeds                        1 tea spoon
  5. Mustard seeds                     1 tea spoon
  6. Green chillies                       2(split it into half)
  7. Curry leaves                       few
  8. Vegetable oil                       1 table spoon
  9. Asafoteda                           1/2 tea poon
  10. Fresh coriander leaves         few
Method:
  1. Clean the Carrots and peel the skin and grate it with grater and keep it aside.
  2. Heat Vegetable oil in a Pan. 
  3. Add Black gram fry for few min,then add cumin seeds and Mustard seeds fry for till seeds to splutter.
  4. Now add Asafoteda,curry leaves and split green chillies,fry for few min.
  5. Then add Grated  Carrots and mix well.
  6. Now add Salt and cook in a medium flame for 2 min.
  7. Add Grated coconut and mix well and off the flame. Decorate with Fresh corinader leaves
  8. Serve as a side accomplishment with Hot Rice and Sambar or with Indian breads.

  2. I'm thinking and looking for a recipe where I can put lots of carrots because my kids wants to eat vegetables. I think this idea is perfect for me. I will definitely create this one.
