Now i am posting Simple, easy digestive fresh Ridge gourd chutney. Delicacy from State of Andhra Pradessh. This chutney is healthy too...

Ingredients:
- Ridge gourd-(Beerakaya) 1 big size around 100 to 150g.
- Black gram 1 tea spoon
- Red chilli 1
- Cumin seeds 1/2 tea spoon
- Tamarind 10g.(small ball size)
- Vegetable oil 1 tea spoon
- Salt to taste around 1 tea spoon
Seasoning:
- Mustard seeds 1 tea spoon
- Cumin seeds 1/2 tea spoon
- Asafoteda a pinch
- Vegetable oil 1 tea spoon
- (red chilii 1 optional)
Method:
- Peel ridge gourd skin and this pulpy vegetable make in to small pieces.
- Heat oil in a pan in medium heat,add black gram and fry for few min till they turn it into golden brown color,then add red chilli and cumin seeds fry for few min.till cumin seeds has to splutter.Then add tamarind and fry fro few min.Turn off the flame.
- Take out these fried ingredients in a separate bowl,keep it aside to become cool.
- In a mean while fry Ridge gourd pieces in same pan (what we fried chilli,cumin,black gram) for few min.and cook till Ridge gourd pieces to become soft.
- Take all these fried ingredients and salt in a mixture grinder jar and grind well.
- Remove this chutney in a serving bowl.
- Heat oil in a small pan in a medium heat,add red chilli,mustard seeds,cumin seeds fry for few min.till mustard,cumin s seeds to splutter then add asafoteda and off the flame.
- Add this seasoning into chutney and mix well.
- Serve with hot rice topping with clarified butter.

Ps:
If Ridge gourd is too tender we can make it few recipes with this skin. My grand mothers used to make with Ridge guard skin delicious recipes. I will come soon with those recipes.
