Aloo Paratha - Spicy Mashed Potato Stuffed: Indian Whole Wheat Flat- Bread

Aloo Paratha - Spicy Mashed Potato Stuffed: Indian Whole Wheat Flat-Bread. This is very famous break fast recipe from  Northern part of India. I like to make these Parathas in Sunday mornings that too   monsoon and winter lazy sunday mornings are very nice to enjoy these hot Aloo  Parathas topping with dollop of butter and  lime pickle and cup  of  plain fresh curds. 





Ingredients for Paratha dough:
  1. Whole Wheat Flour                                  2 cups
  2. Vegetable oil                                            1 table spoon
  3. Salt                                                            1 tea spoon
  4. Water                                                        100ml(approxemately,if needed use more)
  5. Whole Wheat flour for rolling parathas  100g
For Stuffing:
  1. Aloo (Potato)                      4 potatoes (medium size)(app.5 to 6 cups  of water is needed for cooking potatoes)
  2. Cumin powder                    1 tea spoon
  3. Turmeric                             1 tea spoon
  4. Coriander powder               1 tea spoon
  5. Garam masala powder       1 tea spoon
  6. Salt                                      1 tea spoon
  7. Ginger paste                       1 tea spoon
  8. green chillies                       2 cut into small pieces
  9. Fresh corinader leaves       little(optional)
  10. Lemon juice                        2 tea spoons
  11. Vegetable oil                      1 table spoon
  12. Cumin seeds                       1 tea spoon
For Sallow fry Parathas:
  1. Vegetable oil                    1 cup
  2. Butter is optional for topping
Method for Dough:
  1. Take Wheat flour in a wide bowl,add oil and salt then mix well with hands.
  2. Now add  little little amount of water and make it  like a smooth dough and Cover.
  3. Keep it aside for 10 to 15 min.
 Method for Stuffing:
    1. Boil 4  Potatoes with 6 cups of water.After the water comes to  boil, reduce the heat and cook till potatoes to become tender.(we can cook  potatoes in pressure cooker or in a microwave.)
    2. Now stain water from cooked potatoes and let them aside to become cool.(don't cool the potatoes under running  water,they will become too soft and watery)
    3. After they become cool,remove skin from potatoes and  mash it and keep it aside.
    4. Heat (in a medium flame) 1 table spoon vegetable oil in a pan add cumin seeds and fry for few min.and add green chillies,ginger paste,cumin powder,turmeric powder,coriander powder,salt,garam masala and mashed potatoes and mix well and cook for few min.
    5. Turn off the flame and add lemon juice mix well keep it aside to become cool.
Method for making  Aloo Paratha:
  1. Take wheat flour dough and make medium size dough balls.
  2. Now take one dough ball press gently with wooden roller pin.
  3. Take some spicy mashed  potato mix stuff it in the rolled dough and closed slowly with  hands.
  4. Now dust wheat flour on top of the filled dough and press gently with wooden roller pin and make it in to round paratha.
  5. Gently transfer it into hot Tawa(pan) and brush with vegetable oil and shallow fry both the sides (till turn it into golden brown color).
  6. Place it in serving plate.
  7. Serve hot Aloo Parathas topping with butter and lemon pickle or tomato pickle or tomato sauce and fresh plain cup of curds.



Boiled Potatoes

Spicy  Potato stuffing topping with lemon juice
 Whole wheat flour dough
 Rolling pin
small round portion of  whole wheat flour dough
gently press the dough with hands
 make it like small basket shape
 fill this basket with spicy mashed potato and close gently from top portion with hands 
 dust dry wheat flour on the top of the Paratha and press gently with rolling pin

 gently transfer the paratha in to hot Tawa(pan)and brush vegetable oil and  shallow fry both the sides
