My Recent Explore: Wonderful Hong Kong

Image
I recently visited Hong Kong along with my hubby  Really wonderful  place. .Hong Kong  is a beautiful city, spread over both an  island and mainland region and doesn't appear to be vast, despite it really being so!.When we landed at the airport it was raining, but it was somewhat a nice feeling when we landed. Of course the airport is built in a highly functional manner, making the arrival, immigration and visa formalities felt like a simple routine. While landing we raced along with few ships that are reaching the port to find a berth, and suddenly we are landing. Though a similar experience as of landing at Dempasar airport, Hong Kong made look like a gigantic runway.in the middle of so much of water..We cleared our formalities, come out from airport and reached our hotel. Picking up a Green Taxi was made easy by the exit gate officials, who very warmly helped us get a taxi to Hyatt Regency Sha Tin.  And what a wonderful foamy cafe latte...

Louki Kofta

Image
Louki ka Kofta Louki ka Kofta  is a North Indian gravy based Curry made with Bottlle Gourd.  In India a range of gourds are available such as Bottle Gourd, Ridge Gourd, Ash Gourd, Bitter Gourd, Snake Gourd besides a variety of cucumbers and these are available through-out the year.  Today I am presenting a curry called Louki ka Kofta,  made with Bottle Gourd. This wonderful gourd is a  healthy vegetable,  looks like a Bottle or even like a mace, when it grows to a huge size in the farm. Known as Calabash ( Lagenaria siceraria), i t is considered as a endothermic or  cool vegetable and is very easily digestible too. Louki ka Kofta is a popular curry in Northern Parts of India. It goes  very well with a wide variety of Indian Breads (Rotis). Long time back i  learnt this curry from one of my  friends from Delhi. I reminisce fondly those days....Just within a week after my marriage I had to move from South India to Northern region...
